Heat oven to 300 degrees Farenheit
In a very large bowl, combine the oats, nuts, coconut and seeds
In a small saucepan (or microwave-safe bowl), combine peanut butter, honey and salt over medium heat (or microwave one minute). Stir until everything is melted or softened enough to make it easy to work with
Pour mixture over dry ingredients and stir to coat well. A wooden spoon works well for this. If you find it thick, use a spatual or your hands to blend it in
Cover two baking sheets (with sides) with parchment paper. Pour the mixture onto the sheets, then spred out. Sprinkle with the cinnamon if desired.
Bake for 30-40 minutes, stirring once or twice. You know it's done when it's golden and toasty-smelling.
Let cool before adding dried fruit
Eat on its own, in milk or stir it into yogurt.
Store in a Tupperware container or mason jars
